Spring in Vermont Has Arrived
Activity Idea: We thought we would never see green grass again...Now for spring cleaning
inside and out! You may not realize, but cleaning can be a great form of physical activity.
So...one, two, three...scrub that floor, dust those shelves, wipe those windows, and breathe.
Nutrition Tip: Berries are powerful antioxidants. The red color of a strawberry lets us know that
it is good for the heart. And the blue color of a blueberry tells us it has good things for the brain.

Recipe: Whole-Wheat Berry Muffins
Ingredients: 12 muffins
1 1/2 cups whole-wheat flour
1/2 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg (optional)
2 eggs
2 tablespoons honey
1 teaspoon pure vanilla extract
1/4 cup oil
3/4 cup orange juice or apple juice
About 1 cup of fresh or frozen berries of your choice
Preparation:
Heat oven to 400 degrees F. In a large bowl mix the flour, salt, baking powder, cinnamon and
nutmeg. In a separate bowl mix the eggs, honey, vanilla, oil and orange juice. Mix the dry and
wet ingredients together – do not overmix. Fold in berries of choice.
Prepare muffin pan with cooking spray and add batter. Bake for 10 – 15 minutes or until a
toothpick comes out clean.
Serve warm or at room temperature and freeze some for a later date. Enjoy!
